Gazpacho for the Summer

It’s getting hotter and hotter in MA, tonight we even watched the fireflies whirl about in the yard.  Gazpacho is perfect for summer because it is so cooling and refreshing.  The other benefit is disuse of the oven, although, this recipe calls for grilling the veggies, but that’s okay because its done outside and doesn’t [...]

Weeknight Meals: A montage of Veggies

I find it difficult to make pretty looking food in the middle of the week.  Also, I’m in a bit of a rut at the moment because I’m tired of pasta, quinoa, and couscous.  I really don’t want any grains at the moment, so tonight I filled up on potato.  This dish showcases pretty much [...]

Funny Vegetables

I was sort of hoping that these funny vegetables would inspire some innovative and creative dish, but instead I ended up with a vegetable tian with basil oil and parmesan, oh well.  It was nowhere near as filling as the last tian- there’s less starch in this one, so make sure to accompany it with [...]

Marscapone Eggs over Shaved Zucchini

This should have been my Easter post.  It involves eggs and is baked in an adorable dish with a bunny on top, see:

Unfortunately I was feeling particularly atheistic yesterday, so I didn’t bother. Plus I got my Easter Chocolate on Saturday, resulting in a pretty unremarkable day.   On average, I fall into the agnostic category.  [...]

Zucchini and Pea Salad with Parmesan Reggiano and Fresh Basil

When I was little, I had a vendetta against peas.  I hated peas with every ounce of my body, and I will never forget one fateful Sunday dinner when I actually ate some peas.  We had the usual- roast meat with roast potatoes, and a few plates of veg, one of which was PEAS.  I [...]

Poached Egg over Hashed Green Squash

I don’t know the difference between zucchini and green squash, I had assumed they were the same thing but for some reason they are sold separately at the supermarket.  I will have to have a look in my Food Lover’s Companion later! The point is, this dish will work with zucchini… but if zucchini is [...]

Veggie Cakes

This is an older post, but I am re-posting it because A. it was a great recipe, and B. The photo is so good, which means it needs to be on the new domain.  Use your best judgment when deciding on quantities, below are rough guidelines, but the rule of thumb is if the mixture [...]
