Lemony Wagon Wheels with Goat Cheese, Spinach and Sun dried Tomato

This is a simple pasta dish, make it with something like Orecchiette or Wagon Wheels (I can’t remember their fancy Italian name).   Use whatever greens you want- Rappini, Kale, Spinach or Dandelion.  Fresh parsley works will, but could be substituted by fresh oregano if you have that on hand instead.

Bean Bake with Parsley-Walnut Pesto

Polenta Casserole

I buy the polenta that comes in one of those jimmy-dean-sausage-tube looking things.  Because it’s easy, and tastes yummy.  You can find it in the vegetable section, strangely.  It has to be refrigerated- maybe that’s why? The influence of this dish came from ALBION COOKS.

It’s not Sunday…

But it’s my weekend and Virginia weather is emanating a lazy Sunday feeling, which means.. EGGS!!! I couldn’t agree more with the blog entitled Eggs on Sunday. Everybody should have eggs on Sunday.  Sometimes I eat eggs on Saturday, too.
