Pizza! With a Spinach based sauce, portobella mushrooms and vidalia onions
Filed in Dinner, Vegetarian, 16/06/2010, 10:58I was going to bake some eggs into it too, but I forgot. I had already overdone it with the mushrooms and onions that were starting to go bad- for that reason, I smooshed them all on. The vidalia onions were already cooked- they were the leftover innards from some fiddley stuffed onions I made [...]

Light Baked Pasta
Filed in Dinner, Vegetarian, 21/03/2010, 09:27There was a bunch of leftover pasta to get rid of, and I wasn’t in the mood for tomato sauce. The alternative is to bung it in an oven proof pyrex dish with a bunch of veggies, white wine, garlic, fresh basil, and mozzarella.

Couscous and Quinoa Gratin
Filed in Dinner, Gluten Free, Vegetarian, 20/02/2010, 14:49This is a simple dish to use up leftover greens and grains. I melted brie in mine, but definitely recommend a stronger cheese- telaggio, goat cheese, or even feta. We ate ours with a balsamic pesto.

Butternut Squash, Spinach, Brie, and Mushroom Stuffed Crepes/Pancakes with Balsamic Roasted Tomatoes
Filed in Dinner, Vegetarian, 16/02/2010, 21:55It’s PANCAKE DAY!!!!! English pancakes only today, because that is the tradition. Though we typically eat these with some lemon juice, orange juice, and sugar, I went the savory route today. Thanks to years of practice flipping pancakes with the Metclan, these turned out okay with no disasters.

Caramelized Onions, Sauteed Spinach, Gooey Brie and Plum Chutney Sandwich
Filed in Vegetarian, lunch, sandwiches, 10/02/2010, 16:51Yes, sandwich posts are a bit of a cop out, but I love sandwiches. Speaking of cop outs, it’s pizza for dinner tonight- take out. We are in the midst of a giant taste test, that is we are trying to figure out who has the best pizza in Harrisonburg, Virginia. To be honest, I’m [...]
Weekend Eggs
Filed in Brunch, Vegetarian, 06/02/2010, 14:05It’s Day 2 of being snowed in (see below). The outdoor cat is inside, hiding out under the couch, and there is one very pissed off Weiner dog, who has resorted to peeing on the front porch due to his abhorrence of the snow. Nevertheless it’s Saturday, which means EGGS. I did another baked egg [...]
Vegetables en Papillote over Israeli Couscous with Almond-Parsley Pesto
Filed in Gluten Free, Vegan, Vegetarian, 04/02/2010, 14:17Guess what? En Papillote means I stuffed a bunch of vegetables in some foil (didn’t have parchment paper, but foil works just as well) with a bit of butter, lemon, olive oil, and white wine, wrapped it up so it looked like a shiny cornish pasty, and bunged it in the oven for 20 minutes [...]
Lemony Wagon Wheels with Goat Cheese, Spinach and Sun dried Tomato
Filed in Dinner, Uncategorized, Vegetarian, 31/01/2010, 14:37This is a simple pasta dish, make it with something like Orecchiette or Wagon Wheels (I can’t remember their fancy Italian name). Use whatever greens you want- Rappini, Kale, Spinach or Dandelion. Fresh parsley works will, but could be substituted by fresh oregano if you have that on hand instead.
