The Worst Day of the Year

…Is tomorrow.  I’m going to try and not be grumpy. It’s a work week so posting is limited, but here is dinner from the other day with precooked quinoa that I brought with me.

THE FEAST

Merrrry Christmas.. or rather, Happy Boxing Day. In the Metclan household we spend the day slobbing around, eating leftovers and not leaving the house unless for leisurely activities (re: movies). So here is our food rundown from yesterday:

Polenta Casserole

I buy the polenta that comes in one of those jimmy-dean-sausage-tube looking things.  Because it’s easy, and tastes yummy.  You can find it in the vegetable section, strangely.  It has to be refrigerated- maybe that’s why? The influence of this dish came from ALBION COOKS.

Moroccan Chef Salad

Roasted chickpeas are good by themselves as a snack, but are just as good mixed with some sun-dried tomatoes and thrown into a salad with toasted pine nuts, roasted bell peppers, bean sprouts, candied facon, gorgonzola cheese and a fresh tomato cilantro salsa.

Smokey Potatoes with Roast Tomatoes, Facon, and Cilantro Pesto

Another versatile recipe useful for getting rid of whatever you’ve got lying around.  In this case I used potatoes and tomatoes with sauteed onions, mushrooms and  FACON (use bacon if you must).  The smokey flavor emanates from Spanish Smoked Paprika.  If you can’t get a hold of this spice, maybe try using some liquid smoke..
