TexMex Salad with Creamy Jalapeno Lime Dressing

A filling salad for lunch or dinner. I didn’t know what to call it, and I’m not completely convinced this salad falls into the Tex-Mex category, but it seemed to fit the best.

THE FEAST

Merrrry Christmas.. or rather, Happy Boxing Day. In the Metclan household we spend the day slobbing around, eating leftovers and not leaving the house unless for leisurely activities (re: movies). So here is our food rundown from yesterday:
