Stuffed Globe Artichokes

Hotel Meal # 2, all microwavable! I never understood the concept of stuffing artichokes- it seemed fruitless to me. What’s the point of going through the trouble of such a fiddley process if you are only going to eat the ends of the leaves. After tonight, I understood. The cheese melts, [...]

Chick’n Francaise with Potatoes Boulangeres

Potatoes Boulangeres is a fancy way of saying Scalloped Potatoes, the difference being that scalloped potatoes typically involves a cream sauce, whereas Potatoes Boulangeres only bothers with milk and broth.  I used Delia Smith’s recipe, which you can find here. It is very simple and very delicious.  Add some greek yogurt and caperberries if you [...]

Valentines Weekend- Lemon butter artichokes and Spaghetti with Slow Roasted Cherry Tomatoes

This weekend we retreated to the Chesapeake Bay, because our lives are so stressful. But in all honesty, job hunting gets depressing so we went away, bought lots of yummy food, and watched Harry Potter. There are no weekend egg pots this week as I got breakfast in bed.
For dinner on [...]

Lemony Wagon Wheels with Goat Cheese, Spinach and Sun dried Tomato

This is a simple pasta dish, make it with something like Orecchiette or Wagon Wheels (I can’t remember their fancy Italian name).   Use whatever greens you want- Rappini, Kale, Spinach or Dandelion.  Fresh parsley works will, but could be substituted by fresh oregano if you have that on hand instead.

Lima Bean Paste and a Sandwich to go with it

Lima beans are good, they are fun to dissect.  For lunch I steamed them and mushed them up with olive oil, lemon juice, garlic, and some red chili pepper to make a yummy paste perfect on crusty bread with some pecorino.  EAT YOUR BEANS.
Lima Bean Paste
1 Serving
Handful of Lima Beans
1 Tbsp Olive Oil
1/2 lemon, [...]

Baby Bok Choy Parcels

It’s been a cold weekend, and we had a nice lazy weekend eating soup and comfort food, and lying by the fire:

We braved the cold and went to the Harrisonburg Farmer’s Market, where we opted to buy some Bok Choy.  Based on the size, I’m going to say it’s Baby Bok Choy, as it is [...]

Pasta Amato with Baked Ricotta

I’ve talked about Pasta Amato before.  It’s the best pasta dish (and introduced to me by the Amato Clan), and so quick and simple to make- besides the whole peeling the tomato thing.  Anyway, this time I had to omit the fresh basil as I didn’t have any, so I used an Italian herb blend [...]

Pesto Stuffed Mushrooms

Another app from New Yrs Eve, served over a bed of dressed arugula. Stuffed Mushrooms never seem to look pretty, more like brown mounds of turd.  I used up the Kale Pesto we made previously, though feel free to use the more conventional type.
Pesto Stuffed Mushrooms
Makes 12 Mushrooms
15 Chestnut Mushrooms
1 Shallot
1 Clove of Garlic
2 Tbsp [...]

Cucumber Cups Filled with Greek Yogurt and Caperberries

This was another New Yrs Eve App.  I had never had caper berries before coming home this holiday, and I love them!!!!!!!! They taste similar to capers, but the texture reminds me more of an olive than a caper, and the flavour while strong, isn’t as robust as that of a caper.  Use English cucumber [...]

Polenta Casserole

I buy the polenta that comes in one of those jimmy-dean-sausage-tube looking things.  Because it’s easy, and tastes yummy.  You can find it in the vegetable section, strangely.  It has to be refrigerated- maybe that’s why? The influence of this dish came from ALBION COOKS.
POLENTA CASSEROLE
1 Tube of Ready-Made-Polenta
1/2 an Onion
1 Clove of garlic
8-10 Baby [...]
