Serves 5 as an Appetizer
2 Cucumbers
1/2 Cup Olives, chopped (Pimento Stuffed works fine)
1/2 Cup Capers
2 tbsp Balsamic Vinegar
1/4 Cup Goat Cheese
3 tbsp chopped Fresh Parsley
Salt and Pepper
