Cilantro-Lime Potato, Mushroom and Kale Enchiladas with a basted Egg
Filed in Dinner, Vegetarian, 15/05/2010, 15:20I’ve been a bit lazy about blogging lately, and I apologize. I’ve been busy interning, studying, and waitressing. I am reallllly looking forward to having a lie in tomorrow and making a nice breakfast.. maybe with some ramps, which I just bought after hearing ramp rumours from my brother. I’ve never had them before, [...]
Cinqo de Mayo: Eggs baked with Black Beans and Spicy Tomato in a Tortilla Cup
Filed in Brunch, Dinner, Vegetarian, breakfast, 04/05/2010, 22:49Celebrating Cinqo de Mayo has become the new St Patricks Day- just as the non-Irish drink green beer and eat corned beef, the non Latinos drink Margaritas and eat burritos. And why not? Celebrations are fun, and so are margaritas.
So here’s to Cinqo de Mayo!!!! Bug off Arizonians (not all of you, just the racists).

Baked Goat Cheese in an Ancho Chile Red Sauce
Filed in Appetizer, Dinner, Gluten Free, Vegetarian, lunch, 24/02/2010, 23:41No post yesterday as the boyfriend had a tummy bug and therefore could not eat, so I didn’t want to tempt him with my delicious cooking.. ha! Look at that pot.. isn’t it charming? Most miniature things are. Even though it looks like Le Cresuet, it’s not- it’s Nouvelle something or other.
Today I used some [...]
Hot Dog Fest X
Filed in Dinner, Vegetarian, 04/02/2010, 14:54Last year, Jon and I began a tradition: Burger Fest. As vegetarians, we like to eat healthy- it’s one of the reasons we are vegetarian, after all. However, there are times where we feel that people equate vegetarianism with a boring, healthy diet. Take plane food for instance, yes it’s horrible, but if you ask [...]

Filed in Appetizer, Dinner, Gluten Free, Soup, Vegan, Vegetarian, 06/01/2010, 17:06New Years Day was a bit chilly in MA, and we needed something semi-healthy to kick off a new year, and to detox from the night before. I’ve been told to eat Black Eyed Peas on New Years Day for good luck, but we didn’t have any, so we settled for some Black Beans instead.

Deconstructed Stuffed Peppers?
Filed in Dinner, Vegetarian, 01/11/2009, 17:48I’m not so sure this recipe qualifies as a deconstructed stuffed peppers, I was really going for a free form stuffed pepper, but deconstructed just sounds so much fancier. Use big bell peppers to make a prettier dish! Experiment with the stuffing, quinoa or some variation of Spanish Rice would be good. I had originally [...]
Smokey Potatoes with Roast Tomatoes, Facon, and Cilantro Pesto
Filed in Dinner, Gluten Free, Uncategorized, Vegan, Vegetarian, 26/10/2009, 23:23Another versatile recipe useful for getting rid of whatever you’ve got lying around. In this case I used potatoes and tomatoes with sauteed onions, mushrooms and FACON (use bacon if you must). The smokey flavor emanates from Spanish Smoked Paprika. If you can’t get a hold of this spice, maybe try using some liquid smoke.. [...]
Veggie Cakes
Filed in Appetizer, Dinner, Gluten Free, Vegan, Vegetarian, , 14:38This is an older post, but I am re-posting it because A. it was a great recipe, and B. The photo is so good, which means it needs to be on the new domain. Use your best judgment when deciding on quantities, below are rough guidelines, but the rule of thumb is if the mixture [...]
