Couscous and Quinoa Gratin

This is a simple dish to use up leftover greens and grains.  I melted brie in mine, but definitely recommend a stronger cheese- telaggio, goat cheese, or even feta.  We ate ours with a balsamic pesto.

1 Sandwich
2 Pieces of Whole Wheat Bread
2 Tbsp Cream Cheese
2 Cloves Roasted Garlic (see recipe below)
1 tsp thyme
Salt and Pepper
1 Tbsp Balsamic

Butternut Squash, Spinach, Brie, and Mushroom Stuffed Crepes/Pancakes with Balsamic Roasted Tomatoes

It’s PANCAKE DAY!!!!! English pancakes only today, because that is the tradition.  Though we typically eat these with some lemon juice, orange juice, and sugar, I went the savory route today.  Thanks to years of practice flipping pancakes with the Metclan, these turned out okay with no disasters.

Kale-Pistachio Pesto with Balsamic Roasted Tomatoes and Smokey Facon

We wanted to get rid of the kale, so we gave  the conventional basil pesto a healthy twist…. healthy until it was saturated with parmesan and butter.  Oops.  Balsamic roasted tomatoes and some green beans really filled out this orzo-based dish.
