Glazing and Grilling Tofu
Filed in Dinner, Gluten Free, Vegan, Vegetarian, lunch, sandwiches, 11/03/2010, 12:29Tofu can be tricky. It’s the texture that bothers me, the flavour isn’t a problem- it will absorb anything and can easily be enhanced with marinades and glazes. Frying tofu in a pool of veggie oil is a viable option, but I hate deep frying- the left over oil, and the smell, and the greasiness [...]
Nori Napoleons
Filed in Appetizer, Gluten Free, Vegan, Vegetarian, 02/03/2010, 20:20I have some Nori to use up and figured I would try and incorporate it into some snack food. I have plenty of hummus, which surprisingly goes quite well with Nori! Add whatever sliced veggies you want- and aybe a slice of feta or halloumi (!!).
Nori Napoleons
Makes 3-4 Napoleons
1 sheet of Nori
1 Tomato
Hummus
Avocado
Cut Nori into [...]
This is as Close as it’s Going to Get to Bento.
Filed in Dinner, Gluten Free, Soup, Vegan, Vegetarian, 28/02/2010, 22:31Do you see the nori cut into the shape of a heart??? That’s as ornate as I could get, a far cry from the bento boxes currently gracing foodgawker with their presence. A for effort.
I wanted to do my sushi bowl tonight- sort of like a free form sushi consisting of sushi rice mixed with [...]
Kohlrabi, Butternut Squash and Potato Latkes
Filed in Appetizer, Dinner, Gluten Free, Vegan, Vegetarian, 25/02/2010, 19:58You can pretty much make latkes, rösti and râpés out of any root veggies you want, just make sure to drain out any extra liquid before hand by placing in a clean towel and ringing tightly. I’m not sure the difference, but supposedly latkes have eggs and röstis do not. So these are latkes, I [...]
Roasted Garlic
Filed in Vegan, Vegetarian, 18/02/2010, 16:25Roasted garlic emanates a sweet, nutty flavour rather than the usual harsh taste attributed to fresh garlic. It is simple to do, and can be a versatile addition to sauces and spreads. I roasted a head of garlic today and mixed it with thyme and cream cheese for a Tomato and Roasted Garlic Cream Cheese [...]
First Try- Homemade Granola
Filed in Vegan, Vegetarian, breakfast, 16/02/2010, 16:46I tried to make my own granola today, for the first time. It was good, but I did learn a few things..
1. Don’t cook for 45 mins
2. When trying a baking recipe out for the first time, make small quantities.
My granola was slightly overcooked, and I think that has to do with the 45 min [...]
Valentines Weekend- Lemon butter artichokes and Spaghetti with Slow Roasted Cherry Tomatoes
Filed in Appetizer, Dinner, Meal Plans, Vegan, Vegetarian, 15/02/2010, 16:17This weekend we retreated to the Chesapeake Bay, because our lives are so stressful. But in all honesty, job hunting gets depressing so we went away, bought lots of yummy food, and watched Harry Potter. There are no weekend egg pots this week as I got breakfast in bed.
For dinner on [...]
Tempeh Bourguignon with Parsley-Chive Dumplings
Filed in Dinner, Vegan, Vegetarian, 12/02/2010, 14:24This Tempeh Bourguignon recipe comes from the Moosewood cookbook. It was so delicious and very easy. I made very few adaptions, only substitutes due to a lag in some ingredients. The recipe calls for fresh thyme which I didn’t have, so I compensated with a dried herb mix. It also recommends dijon mustard, which [...]
What to Do with Leftover Chinese Food
Filed in Dinner, Soup, Vegan, Vegetarian, 09/02/2010, 00:00On Thursday (?) we ordered Chinese food. Jon got General Tso’s Tofu and I got steamed veggies and tofu (yes, I am one of those). Of course we didn’t finish it all, so we had a bunch of left overs. Today we reused them- we stir fried the steamed veggies and tofu medley with garlic, [...]
Vegetables en Papillote over Israeli Couscous with Almond-Parsley Pesto
Filed in Gluten Free, Vegan, Vegetarian, 04/02/2010, 14:17Guess what? En Papillote means I stuffed a bunch of vegetables in some foil (didn’t have parchment paper, but foil works just as well) with a bit of butter, lemon, olive oil, and white wine, wrapped it up so it looked like a shiny cornish pasty, and bunged it in the oven for 20 minutes [...]
