Lemony Wagon Wheels with Goat Cheese, Spinach and Sun dried Tomato

This is a simple pasta dish, make it with something like Orecchiette or Wagon Wheels (I can’t remember their fancy Italian name).   Use whatever greens you want- Rappini, Kale, Spinach or Dandelion.  Fresh parsley works will, but could be substituted by fresh oregano if you have that on hand instead.

Toasts rubbed with Chili Oil and topped with Fresh Mozzarella, Tomato, Avocado, and Chickpeas

Using up the chickpeas was the main goal of Lunch today.   I used the leftover chickpeas from yesterday in the lemon olive oil marinade, along with the avocado and spring onions.

Smokey Potatoes with Roast Tomatoes, Facon, and Cilantro Pesto

Another versatile recipe useful for getting rid of whatever you’ve got lying around.  In this case I used potatoes and tomatoes with sauteed onions, mushrooms and  FACON (use bacon if you must).  The smokey flavor emanates from Spanish Smoked Paprika.  If you can’t get a hold of this spice, maybe try using some liquid smoke..
