Gazpacho for the Summer

It’s getting hotter and hotter in MA, tonight we even watched the fireflies whirl about in the yard.  Gazpacho is perfect for summer because it is so cooling and refreshing.  The other benefit is disuse of the oven, although, this recipe calls for grilling the veggies, but that’s okay because its done outside and doesn’t heat up the kitchen.

I followed this recipe, with the following adaptions:

2 tbsp Srirarcha
3 chives
2 tbsp olive oil
2 tbsp Smoked Paprika

    Beautiful! I love gazpacho in the summer, and the smoky spicy additions of Sriracha and pimenton are a great idea. I’ll definitely try it next time I make a batch.
