Celebrating Cinqo de Mayo has become the new St Patricks Day- just as the non-Irish drink green beer and eat corned beef, the non Latinos drink Margaritas and eat burritos. And why not? Celebrations are fun, and so are margaritas.
So here’s to Cinqo de Mayo!!!! Bug off Arizonians (not all of you, just the racists).
Eggs baked with Black Beans and Spicy Tomato in a Tortilla Cup
1/4 Can Black Beans
1 tbsp Smoked Paprika
1/4 Cup Veggie Broth
2 Roma Tomatoes, skinned
1 clove of Garlic
1/2 small Red Onion
2 tbsp Fresh Cilantro
Red Chili Pepper
Sriracha Sauce (optional)
In a sauce pan, heat some olive oil up and cook the sliced onions for 5-6 minutes. Add in garlic, beans, paprika, tomatoes (chopped), and broth. Stir well. Once the sauce has reduced, add in the lime juice, chili pepper flakes, cilantro and sriracha.
Heat oven to 375. Grease an oven proof ramekin and place tortilla inside, producing a tortilla cup or bowl. Pour in the bean sauce and crack an egg over top, grate cheese. Bake in the oven for about 10-15 minutes until the egg white has settled.
