Poached Egg with Breaded Avocado, Fanned Spring Onions, Mushrooms and Sriracha

It’s been a long hard week. I had to put Ella to sleep, which was one of the hardest things I’ve ever had to do. I am still adjusting to life without her, it’s slightly lonely and feels like I’ve lost a limb.
If deep fried avocadoes hasn’t been a food trend yet, it’s going to be. Maybe I missed it, but better late than never. After a quick google search, deep frying and beer battering seems like the way to go, but I didn’t have 2 hours to make the beer batter, so I went for a (slightly) healthier alternative.
Its Sunday, so naturally I had it with a poached egg
Throw in some fanned spring onions, a couple sauteed mushrooms and Sriracha to spruce it all up. If you aren’t health conscious, I would suggest adding some mayonnaise to the Sriarcha, but it is delicious with out (the yolk contributes substantially to the richness of the dish).
Poached Egg with Breaded Avocado, Fanned Spring Onions, Mushrooms and Sriracha
Serves 1
2 Eggs
Olive Oil
1/2 Avocado
Breadcrumbs
Garlic Powder
Smoked Paprika
Salt
Red Chili Pepper Flakes
1 Spring Onion
3 Baby Bellas
Sriracha
Whisk one egg until mixed. Add the paprika, garlic powder, salt, and red chili pepper to the bread crumbs. Halve the half avocado and dip in the whisked egg, and coat with the bread crumb mixture. In a frying pan coated with hot olive oil, fry the breaded avocado until browned. Set aside.
Poach the egg. Saute the sliced mushrooms in the pan that you fried the avocado in (it probably has some oil left in it and some good flavours) until browned. Take the scallion, chop off the white bit, and cut it in half to produce to lengths. Using a sharp knife, cut vertical lines almost down to the base of each onion, so that the onion fans out.Arrange avocado, onions, mushrooms and poached egg on a plate and serve with Sriracha!
