Roasted Beets with Capers, Goat Cheese and Balsamic Honey Dressing

A simple dish that can be made to look quite pretty, if you can be bothered. In the fridge are some balsamic capers which are delicious and work really well with this dish, but regular capers will work just fine if that’s all you can get your hands on.
Roasted Beets with Capers, Goat Cheese and Balsamic Honey Dressing
Serves 2-3 as a starter
1 Large beet
(Approx) 3 ounces of Goat cheese
2 tbsp Capers
1 tbsp Balsamic
1 tbsp Honey
2 tsp Grapeseed Oil or Olive Oil
Clean the beets and rub with olive oil, roast in the oven wrapped in tin foil for about an hour, or until tender (will vary depending on size). Peel and slice into rounds. Arrange goat cheese in between slices. Mix together honey, balsamic, and grapeseed oil, and drizzle over beets and cheese. Scatter some capers over and there you go!
