Grilled Romaine Salad

Grilling romaine gives it a really smokey, savoury flavour.  It’s a recent food fad I’ve wanted to try for a while.

Grilled Romaine Salad
Serves 3

1 Head of Romaine
Olive Oil
Pecorino
1 Spring Onion
1 Carrot
2 Tomatoes
Pine Nuts
1 Lemon

Cut the romaine into thirds lengthwise. Spray or brush with olive oil and season with salt and pepper. Hide pecorino into the folds of the lettuce. Place a grill pan on medium heat and spray with Pam or other cooking spray. Place the three sections of romaine onto the pan and lightly press down with a spatula for about 3 mins. Flip and cook another couple of minutes. Once grill marks emerge on the lettuce, arrange on plates, drizzle with lemon, and arrange diced tomato, pine nuts, sliced spring onions, and shaved tomatoes over top.
