Tomato and Roasted Garlic Cream Cheese Sandwich with Balsamic Dressed Greens
2 Pieces of Whole Wheat Bread
2 Tbsp Cream Cheese
2 Cloves Roasted Garlic (see recipe below)
1 tsp thyme
Salt and Pepper
1 Tbsp Balsamic
Mixed Greens- Arugula, Radicchio, Endive etc.
Mix cream cheese with salt, pepper, and thyme. Add in two cloves of roasted garlic, mush up well. Spread over toasted bread and top with tomato slices. Mix 1 tbsp Balsamic Vinegar with mixed greens, and arrange over tomato, place second toasted piece of bread on top.
