Soysage Rolls

Getting a sausage roll from the bakery on Saturday mornings with my mum and sis used to be one of my weekly highlights. We would have swimming lessons in the morning at Meadway (? is that right kay? Central?), then go to the bakery for a treat, followed by the newsagent for 2 pieces of candy (usually 1 roll of fruit gums and a packet of chewing gum). A year or two ago, I found a post for soysage rolls on Albion Cooks, we tried them and found them to taste eerily similar to real sausage rolls. For New Years Eve, mum spruced them up a bit by adding some fresh thyme to the soysage mixture, as well as a bit of whole grain mustard inside the pastry.
Soysage Rolls
1/2 tube of Gimme Lean Sausage Style (from lightlife)
Makes 6 medium sized rolls
Pepperidge Farms Puff pastry- 1 sheet
1 tsp of Flour
1 Egg beaten
3 Tbsp Mustard (approx)
1 bunch of Fresh thyme
Freshly Ground Pepper
Preheat oven according to the temp indicated on Puff Pastry Package (probably 350). Take soysage and knead in some pepper and thyme. Create 6 ping pong sized balls of soysage. Cut pastry into 12 rectangles, place the soysage rounds in 6 rectangles and flatten out. Dust with flower. Brush corresponding pastry rectangles with mustard. Seal each rectangle and place on a greased baking sheet. Bush with egg wash and score tops. Bake in oven for about 20 minutes or until pastry is golden.
From the looks of it, it seems you’ve spent a lot of time cooking/eating. I’m jealous.
