Cucumber Cups Filled with Greek Yogurt and Caperberries

This was another New Yrs Eve App.  I had never had caper berries before coming home this holiday, and I love them!!!!!!!! They taste similar to capers, but the texture reminds me more of an olive than a caper, and the flavour while strong, isn’t as robust as that of a caper.  Use English cucumber in order to make smaller cups.  If you eat meat, definitely had a bit of smoked salmon to these.

Cucumber Cups Filled with Greek Yogurt and Caper berries
Makes 12-15 Cucumber Cups

1 English Cucumber
Greek Yogurt
1/2 Lemon
Sprinkle of Smoked Paprika
Caper berries- 1 per cup
Optional: Smoked Salmon

Slice the cucumber into 3/4″ cups.  Scoop out the inside, allowing just enough space to fill with 1 caper berry, but being careful not to reach the bottom.   Fill each with a spoonful of yogurt.  Halve the caper berries and arrange in the cucumber cups.  Squirt some lemon juice over each, season with pepper (won’t need much salt due to the berries), and sprinkle some smoked paprika.  Arrange a slither of salmon in the cups if you are doing so.
