Sweet and Spicy Quinoa Bowl

Sorry about the lack of posting as of late, I have been at hell work, living in a hotel room. I am in the midst of recuperation, trying to rebuild a soul while allowing scratches, bruises, and a fat lip to heal.
SO, I am in need of some good healing food. As I’ve said before, quinoa is the ultimate grain for vegetarians as it offers various nutritional benefits, including some complete protein. A bowl of quinoa mixed with various veggies- like leafy greens, squash, mushrooms or whatever, can make for a very satisfying dinner. My favourite way is to eat it with some tahini yogurt dressing, which you can find here.
Typically I roast butternut with olive oil and red chili pepper, but today I roasted it in a honey-sesame oil-soy sauce- paprika glaze.
Sweet and Spicy Quinoa Bowl
Serves 3
1/2 butternut squash, deseeded, deskinned, and cubed.
Greens: Spinach or kale would work well, but we had some broccoli to use up that was chopped into little bits and mixed with olive oil.
Smokey Ham (Fake ham, brown sugar, smoked paprika)
2 Roma tomatoes, chopped
6 large baby bella mushrooms, chopped.
Dressing: 3 tbsp sesame oil, 3 tbsp adobo sauce
1 tsp Smoked Paprika
1 tbsp sesame oil
1 tbsp soy sauce
1 tbsp honey
sesame seeds
Sliced avocado, to provide respite from the heat.
Chop up the squash into small cubes, throw in baking tray. Make your glaze by mixing together 1tbsp sesame oil, 1 tbsp soy sauce, and 1 tbsp of honey. Whisk in some paprika and chili powder, drizzle over the squash and mix well. Throw in the oven for about 30 mins, until browned. Twenty minutes in, add some chopped tomato. Place fake ham on a tray, and sprinkle with brown sugar and smoked paprika. Bake in oven for 10 minutes until browned.
Assemble dressing by mixing adobo sauce (from canned chipotle peppers) and sesame oil together.
Cook the quinoa according to package instructions. Steam your greens, saute some mushrooms, and throw in with the quinoa. Add chopped up ham and squash. Dish up the quinoa, and drizzle with the dressing. Sprinkle some toasted sesame seeds on top, and garnish with some sliced avocado.
