Can a proper English Breakfast be vegetarian?

Another egg post from my ‘weekend.’
After reading the Guardian’s spurning (but hilarious) response to the New York Magazine’s proclamation that the English Breakfast has infiltrated The City, I had to wonder, can a proper English Breakfast be vegetarian? No, probably not. The essence of an English Breakfast is grease- mushrooms, toast, egg, tomato.. all fried in Bacon fat, or butter. Jamie Oliver once decreed that a proper fry up is cooked in one pan, thus allowing the egg, tomatoes and mushroom to absorb as much fat as possible. Garnishes of fresh parsley and artistically drizzled purees do not belong on the English Breakfast. But the point is, many would argue that English bacon (none of that Wimpy American Bacon that fries itself) and a good sausage are the staple of an English Breakfast. I however, prefer the beans, as you may have guessed from the title of this blog.
Growing up, my dad and granddad made the best English Breakfast around (IMO). The Supplanter likes to kick it up a notch, adding some heat to his tomatoes, while frying the mushrooms in butter. I decided to incorporate the Supplanter’s spicy tomatoes into this recipe. BUT while this dish includes many quintessential ingredients of the English breakfast, it is far too poncy and light, and I’m not going to claim it is a variation of an English Breakfast, because it isn’t. So instead I will call it something else.
Roasted Mushrooms, Spicy Pureed Tomatoes with Facon, and a Poached Egg.
Serves 1
4 Chestnut Mushrooms
1 tbsp olive oil
2 Tomatoes, diced
1-2 tsp of Hot Sauce
2 Slices of facon, diced
1 Egg
Herbs: thyme, sage, parsley.
Destalk the mushrooms and rub with olive oil and thyme. Roast in the oven for about 20 minutes until tender and juices are flowing. Poach egg. Cook tomatoes in a but of olive oil or butter in a frying pan, cover, and cook 5-10 minutes. When soft and mushy, add hot sauce. Puree. Pan fry the facon. Arrange tomatoes over mushrooms, then facon, then the egg. Allow the yoke to burst so it smothers your plate.
